1 large head cauliflower
1⁄4 cup heavy cream, optional
Toppings (optional): Shredded cheese, sour cream, tortilla strips, and chopped cilantro.
- Chop cauliflower into bite-sized pieces; place in large Multipurpose Pot. Add broth; bring to a boil and simmer until cauliflower is tender, about 15 min.
- Using a blender or immersion blender, puree. Return to pot. Stir in hot dip mix. Return to a simmer for about 5 min to allow flavour to meld.
- Stir in cream, if desired. Ladle into bowls and add additional toppings, if desired.
